Crystal Divers. Salote's Carrot Scones.

Salote's Carrot Scones 
 
- 3 tbsp butter
 - 2 cups sugar
 - 2 eggs
 - 4 cups self-raising flour
 - 2 lemons/juice
 - 1 cup coconut milk
 - 1.5 cup of banana or carrot or pawpaw
  
 
Mix butter, sugar & eggs.  Add flour.  Add mashed banana, or pawpaw or carrot.  Then add lemon juice and coconut milk.  Scoop in tablespoons, into greased muffin form.  Bake at 350oF or 400oF for 15-20 min, until fork inserted doesn't come out moist.
